Oven Dried Cherry Tomatoes
This week I realized that we had some cherry tomatoes that were getting a bit soft. I used them in a salad but had some left over, and no plan for them. I hate throwing food away, and am working hard to avoid that whenever possible. So, as soon as I realized these were on the edge, I took action!
Oven drying them, adds so much yummy flavor and they can be stored for later use. It’s super easy. Here is what I did.
cut them in half
toss them in olive oil and a bit of salt
put them on a parchment lined tray
put them in the oven on a middle shelf at 160c for 50-60 minutes.
This is a low and slow process. I didn’t have a ton of time, so I took them out at 50 minutes. They were still a bit juicy, but the flavor was wonderful. Because I was using them on a Flammkuchen later that evening they were perfect for me. If you would like yours to be drier, you can cook them for longer in a slightly cooler oven. This will help to avoid charred bits. To preserve them a bit longer them toss them in a jar and cover with oil. Keep them in the refrigerator.
